What is a Head Chef?
A head chef (chef de cuisine) is a highly skilled professional cook who oversees the operations of a restaurant or dining facility. Head chefs are responsible for the food that comes out of a kitchen, from conception to execution. While many of these professionals gain the necessary skills through work experience in restaurants or eateries, college programs in the culinary arts are widely available. Some cooks gain experience through apprenticeships. It is worth noting that a head chef job description will vary from restaurant to restaurant.
A head chef oversees many diverse aspects of a restaurant or eatery. Head chefs manage and work closely with other chefs, create menu items and determine food inventory needs. Head chefs are employed at a number of food service establishments or facilities, including universities, hospitals, residential care homes and catering companies. They may also work as personal chefs.
In smaller kitchens the head chef is usually the most senior role, but in larger kitchens, a chef de cuisine may be second in command to an executive chef. Depending on the restaurant and individual head chef, they may leave the day-to-day running of the kitchen to someone lower down the hierarchy, for example the sous chef.

What is the role of a Head Chef?
As a Head Chef you will be first in command (unless an Executive Chef is employed) and will organise all the activities of the kitchen. The role will also include:

Control and direct the food preparation process and any other related activities

Construct menus with new or existing culinary creations ensuring the variety and quality of the servings

Approve and “polish” dishes before they reach the customer

Plan orders of equipment or ingredients according to identified shortages

Arrange for repairs of equipment when necessary

Remedy any problems or defects

Be fully in charge of hiring, managing and training kitchen staff, including arranging any required split shifts

Oversee the work of the kitchen staff

Estimate staff’s workload and compensations

Maintain records of payroll and attendance
-
Comply with nutrition, sanitation regulations and safety standards

Foster a climate of cooperation and respect within the kitchen brigade.
What skills does a Head Chef need?
The skills required to become a head chef are varied but you will generally need;

Proven experience working in a professional kitchen. Restaurants may require you to have at least three years’ experience managing shifts or stations in a food service establishment.

The ability to constantly perform well in a high-pressure and fast-paced environment

Excellent organisational skills to ensure the smooth running of a kitchen

In-depth knowledge of all the sections in a kitchen to efficiently manage operations

Strong leadership skills to effectively manage and motivate a kitchen team

Solid financial acumen, including the ability to manage a budget

Creativity and superior culinary skills to create exceptional dishes for an establishment’s menu

Computer literacy, including a working knowledge of relevant software programs, such as a point-of-sale system and Microsoft Office

Business acumen to make sound decisions regarding things like menu prices and kitchen processes

The average salary for a Head Chef in the UK is £30,329 per year. Salaries vary, depending on factors like location and employer.
